WILD = Harvested from wild agave plants.
ANCESTRAL = Traditionally produced without the use of industrial equipment. Agave hearts must be roasted in an underground pit oven and crushed by hand or a stone wheel. Then they are fermented in stone, earth, wood, or clay containers and distilled with the agave fibers in a clay still.
